Flys not the press are actually better - they are best with dumbbells (small "barbells"). These should be done both flat on your back and inclined to work the chest throughout (aka upper and lower pectoral.) Another good workout is the push up, it works the pecs as well as the upper arm and shoulder. Putting a flat plate of say 25 on your back between your shoulders will increase the weight. Failing that you can do the push up with your toes on a chair or bench, putting more weight on your arms and also working the pecs differently. Rows are another good one. And there are machines at gyms (upright "seated" flys is what they are like) which are targeting the pecs.

You can do chest press with two separate barbells. I'm not a big fan of benching either, but barbells are fun. You can increase weight fairly quickly too. I started at 45-50 and went to 75lb (each arm) within a matter of 5-6 months.

Weeellll, the bench press is actually the best one for making your chest grow. It's a large, compound movement that works all supporting muscles (triceps and shoulders mainly) and also works all your small, stabilizer muscles. You could try the bench press movement with dumbells instead of a barbell though. This is different to fly's. With dumbell flies you'll not be able to lift enough sheer weight to force a lot of growth into your chest. You could try pushups - and gradually build up the numbers before doing pushups with a backpack of weights on...

An understanding of the muscle group will give you direction. Pecs are divided into pectoralis major and pectoralis minor (major being the larger muscle). To get the most out of the exercise, you need to stress each muscle group as much as possible. Flat bench, flyes and pushups tend to work the pectoralis major. Inclined bench, inclined flyes, and miltary press (to a lesser note) will work the pectoralis minor. The one exercise that comes to mind that works the entire chest, as well as triceps and delts to a lesser part, is dips. Dips (like pushups) are great for building core muscle.
