Nihilists literally don't believe in anything. There is no system of beliefs. Nihilists ultimately refuse to make any truth claims, not even the truth claim that "we can never know anything". Only a sloppy, false-nihilist would ever say he believed that statement, or in nihilism. Nihilists would answer that the reason why they refuse to make truth claims is that it seems impossible to imagine any means by which one could attain certain knowledge. And if asked whether that was a belief, a nihilist would reply with a question: "what methods can we rely on to achieve certain knowledge?".
