These are all good, especially Mingus Eh Um, but I would never forget Saxophone Colossus by Sonny Rollins and Working and Steaming by the Miles Davis Quintet.

I'm going to say 'Kind of Blue' because it brought me into jazz. 'All Blues' still does me.

Time Out was a big hit and was fun and had good tunes but Brubeck's playing was (and is)always problematical. He would play really well for a while then he would start banging against the groove which taken to the extreme he did was unsettling. Mingus Ah Um has some good cuts but generally I don't think is so good. Shape Of Jazz To Come is still as great to listen to as it was when it first came out. Exciting, god feeling, nice tunes. Kind of Blue would be my favorite. We knew it was a classic when it came out but had no idea it would go on to sell as well as it has and keep on selling. All the pieces fit together on that one. Not a bad note or a weak passage in the whole album. Even better remastered with the right speed!
