I'd use Media Wiki - its great, easy and free!

You can get a decent enough free one (or several) at Wikidot ( http://www.wikidot.com/), or you can apply for one at Wikia ( http://www.wikia.com/wiki/Wikia ), which is generally more professional and Wikipedia-like in its design. I managed to get a wiki started about Noam Chomsky, but I haven't edited it in ages ( http://noamchomsky.wikia.com/wiki/The_Chomsky_Wiki ).
