Mix one Tbs of either vinegar or lemon juice with a cup of milk. Stir and let sit for a minute. That's it.

It depends on what you're using it in. For cooking purposes, I'd use 1/2 cup of plain yogurt and 1/2 cup of milk to substitute for a cup of buttermilk.
