  • Simple macaroni cheese. Cheese (tasty or something similar, diced.) Pasta (any pasta will do, although macaroni is correct) Salt (a small pinch) Flour Milk Simple version is boil some pasta in a pot, a pinch of salt, small pinch. When it is boiling, turn it down so it is boiling controllably, stir frequently. In a saucepan, put some butter, and melt it. Don't boil the butter. Then put in a teaspoon of flour, and have the milk ready. Keep the temperature just high enough to make the butter want to boil, and you will see the flour start sizzling in it. Add in some milk, not much, just enough to make liquid on the bottom of the pan, and mix in the flour. The milk will thicken, and then add more milk. (All the time, you are stirring the milk and flour at this stage). Again and again, in small increments, until the flour will not thicken anymore. Add the cheese. Mix. Stir the pasta. When the pasta is ready (not crunchy, nor powdery, but full bodied)drain the water out. You can add to the cheese sauce either mustard (small amount), parmesan cheese, or something of your choice, if required. Mix the sauce with the pasta, allow to sit for a minute or so, and serve. Use salt if you like. Yummy.
  • Chicken and Rice. Take chicken legs and thighs, a bag of frozen vegetables like peas and carrots, two cups of rice, 4 chicken bullion cubes, and four cups of water. 1)Brown the chicken in a two quart pot. 2)Throw in the rest of the ingredients in the pot cover and simmer on low for 25 minutes. You will have a full dinner and you only dirties up one pot. If you have room in the fridge you can always use it to store the leftovers. If you have sage, oregano, parsley, basil, or tarragon, you can add a teaspoon or so of one or more of these for added flavor. Pepper, garlic, onion powder is also good in this.
