Classic Pie ususaly calls for, Granny Smith Apples that maintain a firm but tender texture after being baked in the oven. However, if you like add a few Johnathan Apples to the mix for a different flavor.

Winesapps are the best. To make the best pie you need to first look for tartness-Granny Smiths are not tart enough-then you consider taste. Of course, the more tart the apple, the more sugar you pile on to offset it!

I've always used Granny Smith because they don't cook up into mush. I will try some of the others mentioned here though.
