It shouldn't take that long. My recipe: place pork (I use a hock usually, but a shoulder works) on a bed of celery, leeks, cabbage, carrots, and a tablespoon peppercorn (sometimes I add garlic). Fill with water up to the pork. Cook on medium heat 2-3 hours. Then roast for 30-45 minutes in oven at 400 degrees, still keeping it on that bed of veggies. In the last few minutes, before you take it out, cover pork with salt and beer. You should get a nice hard crunchy, salty exterior and a juicy, decadent interior. The veggies make a great side dish, so don't throw them out. Goes great with mash potatoes and sauerkraut.
