Why do people who drink alcohol in the street hide the bottle in a brown paper bag?

Because it hides the illegal "open alcoholic container in public."

It makes it that much more funny to hide soda or juice in a paper bag.

To not advertise your flavor of drink. Also they think he hides their drinking from police officers who could arrest them for public drunkenness.

It is the law in some, maybe most, American states. A legacy of prohibition. It is illegal to have an opened container of alcohol in a public place. So those who would drink in public places conceal it with a brown paper bag. In many states, all alcoholic containers must be covered, so the liquor store will always provide a bag. Enforcement is usually pretty lax, but it is something "they" could use against you if they wanted to.

because they are partially drunk and cant figuire out how much easier it would be to drink it from a coffee thermos.

Probably because they couldn't wait to find a newspaper to roll the bottle in. And once they started drinking they couldn't care less about what paper they are using as a cover.
