  • I think that there may have been a build up of ice crystals on your cobbler, when you have thawed it (or during baking) the ice has melted and then your cobbler was sitting in water. The water would make the bottom dough all gummy. If the ice built up on the inside of your cobbler as well, and melted, it could change the consistency of the inside to be more runny due to additional water.
