The sell by date is not a use by date. The sell by date is not even required by law, and is put there as a courtesy by the supplier, so you know how old the eggs are. Some uses require very fresh eggs (e.g., beaten egg whites); some uses require eggs at least 2 weeks old (e.g., boiled eggs). The sell by date is almost always 30 days after the pack date. Refrigerated eggs can be kept for six months. The two things that can degrade them are dehydration, and bacterial contamination. Keeping them in a sealed container while refrigerated will keep them from dehydrating. Bacterial contamination is very hard to detect; therefore, do not consume these eggs raw. There is a test called the "cool water float test" that can tell you how fresh the eggs are.
