  • The price to make them is more than most people want to pay. Chicken or turkey in salads is alot cheaper for the restaurant and the consumer. The restaurants also would prefer to sell their beef/steaks as steaks, since they can charge alot more for it also.
  • Chicken is cheaper. It's also easier to prepare and a lot more lean. Most people looking to have salads are at least somewhat health concious, and do not want a nice glob of steak fat in their salad. To get a cook to cut off every little bit of fat would take a long time and cost quite a bit in labour. Add that to the price of the meat to start with, and you can see my point. Chicken can also be served cold with a salad whereas (with some exceptions) everybody wants their steak hot. When a restaurant buys whole steaks, they want to sell them for $18 as part of a meal, and not in a cheap salad.
  • Steak would cost more and the restaurant would charge a lot more for steak than chicken, which fewer people would be willing to buy. But if you ask me, chicken is better on a salad than steak anyway.
