I just recently, with the release of U2's "U218 Singles" Rediscovered "Sweetest Thing." The song is 20 years old, and somehow I never got into this song, despite having been a casual U2 fan for some time.

Yes. “Two of Us” by the Beatles. I really started liking this song when I watched Paul’s “Concert from Red Square” 2003 DVD Paul McCartney wrote this about he and his wife Linda. When The Beatles were breaking up, it took on new meaning as a gesture of affection from Paul to John Lennon. This is mostly acoustic. It contains some electric guitar and no bass. I love the acoustic guitar.

I haven't recently discovered either, but there are two songs I've been listening to a lot recently because of a new appreciation for them. 1. 99 Red Balloons - But I've been listening to a punk cover of it by Goldfinger that is really good 2. He Ain't Heavy, He's My Brother - This is a classic by The Hollies that I can't seem to get enough of.
