  • Earlier today I made some wonderful pecan pralines in the microwave.....very easy.
  • Well, peel and slice the potatoes thinly, then also peel and slice thinly an onion. Lay down a layer of potato then a layer of onion and repeat finish a layer of potato on top. Pour over enough cream - depends on size of dish you are using but for a 3 litre baking dish I use just over 250 ml of cream or about 1 cup. Cover and bake at 180 degree C until potato is cooked. Uncover and brown off - serve. Variations to above. Add spring onion, bacon, substitute sweet potato or mix with ordinary potato, sprinkle paprika and parmesan or other cheese throughout. Instead of cream use cream of celery/asparagus soup (condensed type and made up with 1 can of milk)...add in other veggies, but then it becomes a veggie mix rather that scallop potatoes.
