  • Do you have a Trader Joe's or World Market? Stores like those usually carry a pure powdered/dry vanilla. The flavor is intense and it can be used in a recipe where cooking is not necessarily needed. Vanilla in an alcohol-type base usually has to be cooked out. I love the stuff and a little goes a long way.
  • Most recipes call for vanilla. But some recipes call for vanilla beans for a special reason. So it can't be substituted easily. Usually you scrape the bean or pod and add those little specks and pulp to a liquid. Use vanilla beans for special things only. When it calls for it, use that. Once you scrape the pod, keep it and use it in a small container of sugar to make vanilla sugar or simmer it in milk or cocoa for the flavor. It can be used over and over.
