I make a pretty mean spinach lasagne and great stuffed shells with meat sauce.

Gnocchi... probably one of the best memories with my grandma was when she taught me to make gnocchi... RIP.

My favorite----Con d'Aglio Olja. "Spaghetti with Oil and Garlic." Mince 4 to 6 cloves of garlic, pan fry in 4 to 5 tablespoons of olive oil until golden brown. Add a bit of chopped fresh red chilli pepper if desired. Add boiled and drained spaghetti to this oil and garlic mixture. Allow spaghetti to soak up oil and simmer a bit. Toss and add black pepper and salt to taste, along with some chopped fresh parsley. Voila!

I just recently bought a northern italian cookbook but I haven't been able to use it yet. I made eggplant parmesian once but my little bro threw it away without tasting it so I never made it again.

Quite often my favorite dish to cook is lasagna.

I make Italian dishes quite often, from pasta dishes to those wonderful low and slow dishes that cook all day. Last week I made a fabulous butternut squash lasagna that my husband is insisting we repeat very soon. We use squash a lot in Italian cooking.

For a quick meal to feed a crowd I fill the crock pot with meatballs, cover with several cans of spaghetti sauce and diced tomatoes. Make a caesar salad and a second salad of diced tomatoes and diced fresh mozzarella topped with fresh basil, olive oil and balsamic vinegar, garlic bread, then boil some pasta. For an appetizer throw some thinly sliced prosciutto over slices of cantalope or other firm sweet melon. The kids like to have corn on the side with this, but that's not remotely Italian. LOL I've got lots of recipes of the type where you agonize for hours making the sauce, etc. but that's not how most of us care to live on a day to day basis. :)

Spinach lasagna with beef and sausage. Lots of ricotta cheese with tomato sauce inside, topped with alfredo sauce, asagio and parmesian cheese.

haven't cooked italian for a long time, how about some spaghetti with italian sausages, bruschettas and a nice salad? We can have a good Merlot with that and end with a creme de caramel and limoncello

Eggplant Parmesan II -- Five Stars This is a no fry recipe for eggplant parmesan. The eggplant slices are baked instead of fried. Where it calls for spaghetti sauce, I make homemade spaghetti sauce but you could use the store bought kind. This recipe is wonderful and it heats up well in the microwave. INGREDIENTS 3 eggplant, peeled and thinly sliced 2 eggs, beaten 4 cups Italian seasoned bread crumbs 6 cups spaghetti sauce, divided 1 (16 ounce) package mozzarella cheese, shredded and divided 1/2 cup grated Parmesan cheese, divided 1/2 teaspoon dried basil DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side. In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top. Bake in preheated oven for 35 minutes, or until golden brown.

For a Quick and Simple one... 3/4 cup extra virgin Olive oil 4 cloves of Garlic 1/2 cup parsly 1 tbs of red pepper flakes 3/4 cup parmesan Salt and pepper to taste 1 box angel hair pasta (cooked) Heat the oil, toss in the garlic and pepper flakes Once it starts to turn golden, turn off the heat and toss in the parsly. Pour it over the cooked pasta and add the parmesan and salt and pepper to taste... make sure you dont plan on doing a lot of making out afterward. the garlic is a kicker :) You can also add artichokes or scallops for those who like them..
