Tofu, I may be more of a meat eater than vegitarian, but when I tried it, it was pretty good... though I ate to much of it and got kind of sick.

I usually make the traditional Christmas sides and have a veggie burger with them.

the last time i ate meat for christmas day was 1994, being vegan 14 years. Just eat what you normally eat, or make something more elaborate like a nut roast. its my first year as a raw vegan , so it looks like a green salad is in order for the big day

tofu stuffed pasta shells. you mix tofu, cheese and spices to make it kinda like ricotta. You place a little bit in each shell and cook them in the oven with sauce and cheese covering them. my mother and I are vegan so we use vegan cheeses. I'm not really sure this answer will make any sense,I'm not a good person to explain things and it's too early for me. here's a link to a recipe- http://www.grouprecipes.com/53760/tofu-stuffed-pasta-shells.html

the same kinds of food you would eat, just sans the meat.

That depends on where you draw the line. Do you still eat fish? If you're vegan and want to still "do it up" for Christmas, I suggest roasting a Tofurky. http://www.tofurky.com/products/tofurkyfeasts.htm
