When men do this it shows a sense of authority towads their wife like they are saying the boss, her who is in charge. When they say my wife then it is more of an equal. Men will talk about the wife when they are talking in a negative way, ie "the wife" let me go to the pub tonight. I think this is done also because it is said on movies and stuff so it is a stereotype of phrase. Not all men say the wife and not all women say my husband, but for the ones that do those reasons would be why!
