I think it is impossible to list all the attacks and counterattacks, and in many ways unhelpful, particularly as you are starting at a strange date, namely the 11th century.
Look at the history of warfare by representatives of the two faiths from their time of foundation. You will see that Christianity spent its first 300 years under persecution, but spread to all of the Roman Empire and beyond into Persia, without a sword being lifted. and under persecution, cut off from the rest of the Christian world, the Nestorian church from the 5th century onwards took by foot Christianity as far as China, Japan and Korea, with small communities in Thailand, Malaysia and Sumatra, before the attacks of the Mongols and Muslims destroyed their centres along the Silk road.
Christianity has flourished peacefully in South India, since St Thomas brought it there in the first century.
Even Christianity's expansion into England in the seventh century was not by war. A Merovingian princess, a Christian, was married to a Saxon pagan king, Ethelbert. Reluctantly, he allowed her to open a church in Canterbury. In the first year, 10 000 people converted, and the king permitted Christianity to flourish, though he, himself, did not convert till much later.
The Christian kings of europe often left much to be desired as examples of their faith, but they largely kept within european borders, and did not attempt to take North Africa or Eastern europe. But Islam, from its outset, was militant, and attacked Europe, Byzantium, and the Middle East. It was only the fortuitous defeat of Muslim troops at Poitiers France by Charles Martel that stopped the onslaught, but Muslims held Spain and Italy until the Middle Ages. The peoples of those countries pleaded to be saved from Muslim rule, because they were told convert or remain as dhimmis or worse. It is not true that Islam left its dhimmis alone. They were put under dreadful pressure to bend the knee. And this went on until 1529 when the turkish Muslim army was defeated at the gates of Vienna. Muslims were finally expelled from the Balkans as late as the early 20th century.
On the other hand, colonial nations never forced conversion of Muslims. If they had, there would be no Islam now. That they were given freedom of religion is seen by their survival under colonial regimes.
