Help answer this question below.

My s.o. has a vegetable garden, but rarely eats any of the veggies produced. What are some tasty veggie recipes?

In our case, he has cucumbers, zucchini, ghost zucchini, crooked nose squash, eggplant, bell peppers, jalapenos, tomatoes, cucumber, and a few others I can't remember. (Who said nothing grew in a desert? ;))Any recipes would be great though, I hate seeing this food go to waste.

    My hubby and I have a huge veggie/fruit garden and we have come up with many recipes.

    Sauteed zucchini and squash, tomatoes, bell peppers with garlic and onion make a tasty ratatouille.

    We also like to take eggplant and put it in egg and flour, and instead of using regular breadcrumbs, use Panko (crunchy Japanese bread crumbs).
    Then we bake it for about 20 minutes.

    You could also make a sauce from the tomatoes and put them on top of the eggplant with a little mozzarella and parmesan cheese and then you have eggplant parmesan. It's lower in fat because you don't have to use oil because the panko is so crunchy.
