I have seen a couple of things done. Sometimes they whack a bunch of celery on a table, and sometimes they use a watermelon too. I am sure there are plenty of other options, but these are the two I have seen done.

I've actually heard that a foley artist will punch, hit, or slap a big piece of raw meat wearing leather gloves, or they put on boxing gloves and punch a phone book.
