Add eggs and beat well. Cream shortening and add to banana mixture. Add dates. Mix flour, baking powder, soda, salt, cinnamon and nuts. Stir into creamed mixture just enough to moisten. Their peels will turn completely brown, but don't worry about the banana within. When ready to use, simply thaw the bananas by letting them sit (unpeeled) on the counter until they warm up. Once thawed, peel the bananas. Substituting apple sauce for the butter works very well -- it adds moisture and sugar and is healthier. Lisa's Superb Banana Walnut Bread Ingredients: 1 cup white flour 1/2 cup oat bran 1 teaspoons baking soda 1/2 teaspoons baking powder 3 mashed ripe bananas (approximately 1 1/2 cups) 1/4 cup low fat buttermilk 4 tablespoons room temperature butter 1 personal size container of no sugar added apple sauce (4oz or 3 tablespoons) 2 teaspoons vanilla 3/8 cup Splenda Sugar Blend for Baking 1 egg 1 cup walnut pieces Directions: Preheat oven to 350 degrees Prepare 3 mini-loaf pans by spraying with non-stick baking spray. Stir together flour, oat bran, baking soda, and baking powder. set aside. Mash the bananas in a bowl. To the bananas add the buttermilk, butter, apple sauce, vanilla, Splenda Baking Blend, and the egg. Beat well with a mixer. Add the banana mixture to the flour mixture and blend until totally incorporated. Stir in the cup of walnuts. cook for 35 minutes or until toothpick inserted into middle comes out dry.   • Yes you can substitute honey or maple syrup which is my favorite. Also if you are trying to stay away from all sweets, try stevia which is a terrific sweetener with zero on glycemic index.
  • 1 3/4 c. sifted cake flour 2 tsp. baking powder 1/4 tsp. baking soda 1/2 tsp. salt 1/4 c. melted margarine 2 egg, beaten Liquid sweetener to equal 1/2 c. sugar 1 tsp. vanilla 2 med. sized bananas, mashed Sift together flour, baking powder, baking soda and salt. Add remaining ingredients except bananas. Stir only until flour mixture is moistened. Fold in mashed bananas. Pour into greased 8 x 4 inch loaf pan. Bake at 350 degrees until top springs back when touched, about an hour.
