Black olives are ripened, whereas green ones are picked before they are ripe. Both kinds have to be pickled or otherwise treated to remove phenolic compounds that make them inedible, but ripe olives require less preparation than green olives before they can be eaten. Personally, I prefer the black ones, but I've enjoyed all varieties of olives.
