<h4 class="dechead">On One Hand: Cook as Soon as Possible
Once you have soaked your choice of dried beans overnight, it is best to rinse, drain and cook them right away. Soaking the beans shortens cooking time, but doing so also activates them, and leaving them once soaked will cause them to either ferment, mold or sprout.
On the Other: Rinse and Let Them Sprout
Don't cook your beans right away if you want to let them sprout. After soaking, simply rinse, drain and leave them in a bowl or colander at room temperature for the next two to three days, rinsing and draining every eight hours. The amount of time you want to let the beans sprout for depends on the size of the sprout you want occurring. The best beans for sprouting include mung, garbanzo, lentil and adzuki.
Bottom Line
Cook beans right away to prevent them from molding, sprouting or fermenting. Don't cook them if you want bean sprouts.
