I have a deal with my local abattoir, where I buy all their old nipples off them to use instead of gravel around my house. It gives my home a nice unique look, and also provides a handy source of snacking when the fridge is bare.

The nipple alone you could just cut off. But the milk gland behind it put people in mind of a cancerous growth with its texture and look, so the nipples are avoided when cutting out meat. It is all perfectly wholesome protein though, so I would expect it to be ground up fine to stretch chopped meats. Or used in pet food as Sheriff Raff suggest.

I expect that when the animal is skinned, they come off with the skin. At that point if the skin is going to be used as leather, then they are (more than likely) simply cut out as defects in the material. I don't think that they'll end up in any kind of meat product, either for human or animal consumption, just because of the way the processing line works. It wouldn't make much economic sense to focus on that tiny part of the anatomy to re-process as food. The milk glands and all other internals that aren't processed separately are another story. I'm sure that they are ground up into "byproducts" of some sort.
