Why do we say "there's more than one way to skin a cat?" Why would someone skin a cat?

Because cats are so agile and quick, it makes it very difficult to skin one, so someone came up with the saying to express the difficulty in doing something that is hard and that there are other possible approaches to accomplishing the task.

It doesn't really mean literally skinning a cat. It is just saying that there are several ways to do something whether legal or illegal.

I dont think it means particulary about skinning but to be more astute and they used animal names as an excuse. I have also seen it as skinning a rabbit.

Why skin a cat-several reasons. Hats, glove linings, loin cloths. Not to mention taxidermy-decorative or nostalgic.
