humanity is the quality or state of being a human while mankind is the totality of human beings.

They are both collective terms for the human race and are used interchangeably in that sense. Humanity also has another meaning, that being, the quality of kindness to other people. The 'Humanities' is also a term refering to academic studies on the fields of history, art, languages, etc., that deal with the cultural aspects of human civilization.
