Desu is the verb "to be" so it is used a lot. For example, Kore wa watashi no hon desu - this is my book. My Japanese teacher explained that the verb is the most important part of the sentence a lot of the time, and is therefore at the end of the sentence.

Desu is the verb to be, but only in the sense of expressing an equality. The english verb 'to be' can be used to show both equality and existence. The verb 'desu' can only express equality. It occurs at the end of many sentences because that's where verbs go in japanese.
