From the folks at Cooks.com -- I haven't tried this to say how it tastes but it looks easy and sounds tasty: EASY SQUASH CASSEROLE 4 med. squash 2 tbsp. butter 1/2 c. cracker meal Salt Pepper 1 egg Slice and boil squash in salted water until tender; drain. Mash squash and add rest of ingredients. Mix and put in buttered Pyrex dish. Bake covered at 350 degrees for 30 minutes. Uncover and continue to bake for 10 minutes. You can use cracker crumbs instead of meal and add onions if you prefer.

Fred has the right idea above, but I am going to have to suggest a different recipe. By the way, I am a true southern boy who grows, cooks, and eats squash! Take those 4 med squash and slice them into 1/4-1/2 inch slices... you don't have to be precise. In a medium/large bowl mix the following: 3/4 cup cornmeal 3/4 cup self rising flour 1 egg 1/2 cup of milk (maybe a little more) salt and pepper to taste Mix those with a spoon until it is the consistency of pancake batter. You want it to be thick enough to really stick to the squash and coat it completely... just a little of the excess should drip off the squash slice. When your batter is ready dump your squash slices into the bowl and mix them around a bit to get them coated. Heat up about 1/3 inch of vegetable oil, butter, or crisco in a large frying pan and wait until the grease is fully hot. (I recommend using Crisco, because it will give you a better taste and texture even after the squash cool down.) One by one, grab pieces of the squash from the batter, making sure they are coated with a good layer of the mix and carefully lay them flat in the frying pan. Only put as many as you can fit in one layer in the pan. Let them sizzle for about 2 or 3 minutes and then turn each one over with a fork or tongs. (Don't use a spatule as this will cause your breading to come off. Brown another 2 minutes on the opposite side. When your squash breading has a nice medium brown color you can take them out and allow them to drain on some paper towels. Salt and pepper to taste and enjoy while they are hot! If you want to go all out make a dip for them. Add 1/3 cup ranch dressing, a dash of tabasco sauce, and a tablespoon of grated parmesan cheese (like you put on spaghetti.) Mix it up and serve on the side.

Cut the thing in half, drizzle with olive oil and salt /pepper to your liking and wrap in foil, put it an oven at 375 deg for 45 mins to soften the inside, put some butter on and grab a fork!

Boil in water with chopped onions for about 20 minutes. yummy!!!

Butternut Squash is yummy and very easy to prepare. Just cut it in half length-wise, scoop out the seeds and place on a shallow baking sheet, cut side down with salt, pepper and several tablespoons of olive oil. (Or if you like it sweet, brown sugar and butter) Bake at 375 for an hour and enjoy.

1/2 cup diced white onion 1/2 cup diced tomato 1 garlic clove 1 Cup of squash (spanish squash, zucchini etc) 1 can of canned or one small bag of frozen corn 1 Cup grated mozzerela cheese salt and pepper to taste Now sautee the onion , tomatoe and garlic in butter until soft then add the squash. Simmer on low heat until the squash is soft then add the corn and simmer another 5 or so minutes. Add cheese and salt and pepper to it. It is really quite yummy!

What kind? The yellow squash or the acorn type? The acorn type can be split in half and baked at 400 degrees for an hour with a little butter (cover with foil). The yellow squash can be pan fried with onion, green pepper, salt, pepper, garlic, parsley and a little oregano.
