My daughter is to marry Paul next year. After the marriage, what will Paul's parents relationship be to me? Is there an official term for this, (like father-in-law, sister-in-law etc.) or shall I always have to refer to them as 'Paul's parents'?

When your daughter marries Paul his parents become her Mother-in-law and father-in-law. You do not have a relationship with them in that sense so they remain Paul's parents and/or your daughters in-laws. However, I am sure they have first names so you could refer to them by those if you feel more comfortable. -
