A bushel is going to be alot of whatever you are making! maybe estimate half of the recipe or even a quarter of the original recipe unless you want that much and have a ton of canning jars! I weighed my tomatoes in small bunches with a small kitchen scale as I brought them into the house from the garden. another tip if you are canning: start a big pan of water to just below boiling. carefully put several tomatoes into the hot water, leave for about 1 minute then plunge them into a sink full of cold water, the skins peel off extremely well this way. makes the whole job easier. good luck whatever you are making!
