You could take it literally, meaning, he knows you well and he knows you have a good memory, or he is implying that you tend to hold a grudge.

That means that in theory he could lie to you and get away with it if he is careful to keep his plot coherent, but in practise he will probably get caught in a lie eventually because you remember the smallest details.

He could of just been complementing you and your looking way too into it

One of two things comes to mind. Either you have a great capacity for memory, or you can hold onto a grudge with such tenacity that it is startling. Which one do you think he meant?

I'm guessing he thinks that you aren't afraid of using things he has said in the past as ammunition against him.

Either he's concerned you'll share all his dirty little secrets if something bad happens to the relationship, or he's concerned about getting caught lying to you...because you remember.

Means he does not trust "the words coming out of his mouth" and is asking for forgiveness up front. A typical disclaimer statement by someone who doesn't want to be held accountable for breaking hearts by spewing out meaningless sayings that he is very comfortable using as part of his repertoire.
