1989 olds delta 88, 3.8 engine... would timing or censors being off, cause a rattling or knocking noise?

If it is valve clatter when the engine is under a load the fix may be as simple as using a higher octane fuel. It may however be timing. You didn't say how many miles since the last overhaul. If the engine diesels when you shut it off you could have carbon buildup on your valves and need to use a good fuel treatment with your next tank of gas.
