I don't know exactly what it is about raw cookie dough but, it's my heroin ! I make up my cookie dough and ice cream with pasteurized eggs so my versions are totally safe to eat .

Cooking does many things, such as reduce the water content, caramalize the sugar (or at least partially change it), and change the consistency. It also causes different ingredients to fuse in such ways that the taste is altered. . I'm not sure which of the above causes the yumminess to fade ever so slightly, if it's a combination, or maybe even if it is something else altogether.

For the same reason the forbidden fruit was so good back in bible times. People know they shouldn't eat it, but they are so tempted they can't resist and then they eat it. And it tastes good.

I don't know but I love it too. My favorites are sugar cookie and chocolate chip dough. Completely home made of course. I hate that pre-made frozen stuff. I guess I'm kind of a raw dough sort of person because I like pie crust dough too.
