  • Gelatin is an odorless, tasteless and colorless thickening agent, which when dissolved in hot water and cooled, forms a jelly. Gelatin is pure protein derived from beef and veal bones, cartilage, tendons and other tissue. Much of the commercial gelatin today is a by-product of pig skin. Until the advent of commercial gelatin in the late 19th century, jelled dishes were not very popular because housewives had to make their own jelling agent by laboriously boiling calves' feet or knuckles. Their only alternative was to use either the hard-to-obtain ISINGLASS (gelatin from fish air bladders) or CARRAGEEN (a dried seaweed product).
  • If you have ever boiled a turkey or chicken, then put it in the fridge with the broth still there, you will notice that there is a jelly like substance around the turkey/chicken. This is gelatin. It is made numerous ways from animals. This is why it has a high level of protein. If you are sick and need nutrients, you should put some gelatine in some chicken soup. It will help you get your strength back. It also makes your hair and fingernails stronger.

  • Gelatin is made by boiling the hides and bones of cows and pigs to release their collagen, which is boiled some more, filtered, dried and ground into a powder. Because it has been so extensively processed, gelatin is not classified as an animal product by the government, but strict vegetarians avoid it nonetheless.

  • "The production of the gelatin starts w/refinement of collagen-bearing tissues of ANY ANIMAL that has raised and slaughtered for food purposes. ....These materials are carefully soaked in alkalies and/or acids and washed in clean water to remove almost all non-collagen constituents, including meat. During this soaking period the collagen is converted to gelatin. The treated materials are then cooked gently in pure water to extract the gelatin, which is further refined by filtration....(Contrary to common belief, gelatin is not manufactured from horns or hooves or meat of animals, for these do not contain the necessary collagen). "It is interesting to note that during manufacture of gelatin, chemical changes take place so that, in the final gelatin product, the composition and identity of the orignal material is completely eliminated. Because of this, gelatin is not considered a meat food product by the United States government..." The sheet also reminds us that gelatin is used to coat medicine pills as well.
