  • There are as many ways to make it as people to taste it. Do a search for "chile con queso" and you'll find many recipes. Although the better ones use a combination of cheeses (monterey jack is almost always one of them), the easy way is to melt velveeta cheese and mix with a can of rotel tomatoes.

They make it out of Gordos Melt, an easy melt white american cheese that until now you could only get it thru foodservice. now the Gordos people have the Gordos Melt and the cheese dip already made in a cup. It really is just like the real thing! It's creamy, buttery, smooth and really easy. Its just milk and cheese... you just have to use the Gordos Melt.   • If you are talking about the plain cheese dip you get at those restaurants, it is merely Queso Chihuahua or queso menonita. I love how it melts at lower temperatures.
