The Smokies (E. Tenn area) are gorgeous, and you can find all kinds of cool little trails. There's crazy wildlife and stuff. Cherokee National Forest is a good spot too. But if you hear banjo music. . . just run.

If you like history, the Civil War battlefields are interesting. I hiked around Shiloh (in Tennessee) for a couple of days when I was a kid. Quiet and almost hauntingly beautiful in some parts of the park.
