Italian Prosciutto or German Speck and Spanish Serrano are essentially the same type of dry cure but the geography, local diet of the swine, and curing process make the changes to the finished meat. ---Prosciutto, freshly cut, smooth meaty taste, lightly smoked and salted. ---Serrano tends to overkill the palate with it's spiked taste and ---Speck is a mouthful of salt. (I am sure there are many varing oppinions on this!) ...Of those 3 Proscuitto is by far my favorite but..... Ever try Culatello?? Melts in the mouth.. A lighter version of Prosciutto, more moisture and flavour not as salted but hard to find in north america. mmmmmmmmmm :D

I thought serrano was a type of chilli pepper.

I would definitely take smoked Prosciutto. I guess it is because I am used to it and I do like it very much. Regards.

Serrano i like the flavor of it more, it seems less salty than procuitto

Serrano, more cured and better flavor to it specially the Pata Negra(wild boar).
