I'm looking for the opinion of a saxophonist or other wind instrument player. Since your instrument can only play one note at a time, it seems much easier to grasp than a string instrument or piano. I'm probably wrong. Can you tell me why?

Yes, you are only playing one note at a time, but it is likely you are moving your hands as much to play this single tune as you would to play something more complex on the piano or guitar. It is easier only because it is easier to focus on what you are playing, you can hear it all better and there is not so much guess work. There is also the issue of the embouchure (the way you use your mouth with the instrument). For woodwind instruments, obviously, this is half the battle. So all in all, they maybe are slightly easier, but mostly I would say these instruments are just different.
