Raw potatoes with the skin or jacket on should not be frozen raw. Due to the slow speed of the way a home freezer freezes food, potatoes' "meat" will discolor, turning gray. HOWEVER, if the potatoes are prepared for French fries, potato pancakes or even sliced and blanched may be frozen. You can find-out for yourself by freezing one or two whole potatoes. When you're ready to use them, remove from the freezer, allow them to thaw in the refrigerator. After they thaw, peel them. If the color isn't that beautiful white you're used to seeing, you know you shouldn't do it again WITH THAT PARTICULAR VARIETY. MAYBE there is a kind or variety which is tolerant to discoloring in the freezer. Generally, potatoes have a "shelf life" [keep very well] at room temperature for a week to 10 days.
