  • Latke is the spelling, actually. I'm afraid I've never made them. My mum always does and I tend to devour about thirty of them. So delicious.
  • Grate some potato and onion together. Put them all in a towel. Squeeze out the liquid as hard as you can. Into a bowl they go. Add a few eggs beaten, some salt and a sprinkling of flour. Scoop out about 1/4 cup onto your well greased griddle or a little oil in a skillet, fry one side, flip, fry other side.
