Because avi isn't on the list of document types in iTunes.app's Info.plist Assuming Quicktime can play your avi (that is, you've got the appropriate codec to play it), you can set the file type of your avi to MooV, and then iTunes will be able to add it. From the terminal, use SetFile -t MooV myfile.avi to set myfile.avi's file type to MooV.
