fresh thai basil. great for adding to curry. pretty simple. stir fry some peppers and bamboo shoots and what ever meat you like, and green, red or yellow curry paste, add a can of coconut milk. Let simmer for a ten or 15 minutes. Add fresh basil right be fore you serve it. Pour over rice.

My favorite herb is dill. But not in pickles. I dislike pickles. I also like curry spice and hot jalapeno peppers. I like paprika, which I guess is my favorite sweet spice. I love it on Hungarian goulash, one of my favorite meals. I don't cook much. I just have it served to me on a big silver platter. LOL.

I like caraway seeds and add them to meat sauce for spaghetti. It is also a main ingredient in my fried whole wheat flatbread (chapati), and the only other ingredients are water, olive oil, and a little bit of salt, so the caraway seeds give it necessary flavor.

Not my favorite spice but a handy tip I discovered by accident: turmeric on cheaper cuts of beef make them taste like more pricey cuts.

If you mean by "spice" a seasoning that is technically a spice I have to go with black pepper. If you're including herbs, then oregano in the herb seasoning category.

I like to use garlic and cayenne pepper.

I use a lot of garlic powder in my cooking. Sometime I use cinnamon and nutmeg in recipes that you wouldn't expect - like baked beans.

Not "special" as such ... BUT; I do use spices that I do not tell what was used .. Like ; I'll use sage in hamburger to make it have a saussage taste .... I'll throw some Cayanne pepper in my chili to kind spice it up a little along with the chili powder ... etc.
