You can't replace it... However if you can add more system memory (RAM) BIOS options on some laptops may let you dedicate more RAM to use as VRAM. Doesn't really help much of anything however.

As a rule, no. A majority of laptops out there are sold with a graphics chip actually soldered onto the motherboard. Swapping it out is NOT an option. Some higher end Laptops , however, can have their graphics ability upgraded but it's a rare instance. If you posted what make and model your laptop is, I could tell you one way or the other.
