It's usually more expensive and difficult to cook than white rice. Simple economics. It would cut into the profit margin.

I have been to many Chinese and Japanese retaurants that do. Of course, you need to ask for it. But I live in CA, where brown rice is more common anyhow. :o)

Whole grain rice is only eaten by the lower/poor chinese societies. Polished white rice is eaten by the richer upper levels of chinese society. Its a class thing. Restaurants want to impress people so they serve polished white rice. Its not about shelf life or economics. Its about saving face and avoiding a cracked rice bowl.

Because it is much easier to cook and looks better after it's been fried! I know, I work in a Chinese takeaway.

You never see it in restaurants in China. Not that I've seen.
