"The undersigned, being persons entitled to notice of the probate of this will, waive such notice." Does this mean they are giving up their rights to the will?

It means they won't be notified when the will is validated by a probate judge. At least, that's what the words mean. If it's a major concern, ask a lawyer about it. There could be something else in the document that alters the meaning of that sentence. Yay legalese!
