I need an 8th grade science fair project. It has to deal with chemistry,astronomy, or environmental science.

Do any one of those subjects interest you more than the others? If so, pick one, then go ask the teacher who teaches that subject if he might have some ideas. Or you can search the net for some interesting student projects you could try in that subject.

You could always go with the old standby - the baking soda volcano :)

Three prisms, three sources of light (LED, Laser pointer, Incandecent), all lined up, all refracting to a white board with the refracted spectrums marked off with wavelength measurements. This is part of the basis of all three. Run with it.
