Don't go see a movie and that is it. Hang out with the person alone, with his/her friends, with his/her family. Watch how the person handles different things like frustration, competition, pride, success, failure, disagreements, happiness, depression, etc. Have more in depth conversations than "how was your day?" "fine." Take the time to compose questions about the persons thoughts, goals, motivations, fears, desires, needs.
