  • Unami is the taste of amino acids: (ew-nam-e) Umami is the taste of amino acids to us. When we take in proteins we will activate G-protein and this elevates our intracellular calcium. A prime example of this taste is Monosodium glutamate (MSG), added to many foods to stimulate the perception of the unami receptors on the tongue. Scientists questioned if we can actually taste unami. This was answered by the fact that various taste buds are in the mouth and actually are set up to receive the sense of amino acids. http://www.bodybuilding.com/fun/drryan32.htm
  • http://www.umamiinfo.com/what_exactly_is_umami/ http://aroundbritainwithapaunch.blogspot.com/2007/12/unami-quintessential-taste.html Those links explain it pretty well. From what I can tell, Umami is the taste of "fullness" or "volume" of savoury flavour. It is the taste of Rich meatiness in Mushrooms, Beef and most meats for that matter. Its hard explaining a sense using words, but I think that does a decent job of it. Hope it helps! Edit: as KagomeShuko Explained, Umami is he taste sensation caused by some Amino Acids that certain taste receptors are sensitive to.
