Your body will only retain the matter that has broken down in the process of traveling through your digestive system. (So usually no.) That's why laxatives are so effective in loosing weight (However not recommended due to the damage they can cause.). It is possible, but rare, for a the shell of food to not break down, yet due to it's porous nature, dissolve internally. In the case of corn, I believe it stays externally and internally intact when improperly digested. Cooked rice should usually digest due to it's soft texture.

Rarely will someone poop half a Big Mac still intact (A green pea or a piece of corn, yes!) thus; if you can't see it (down there) it means that your body has indeed absorbed its nutrients as well as all of its calories.

We'll, you said 'mostly' undigested. I suppose you would absorb the calories from the digested part...:)
